This anaerobic natural from Worka Chelichele washing station in Ethiopia is a complex, rounded coffee with floral aromatics and a syrupy aftertaste – perfect as a filter!

As a way to increase value & stand out among a growing number of specialty washing stations in Ethiopia, Sucafina’s in-country partner, Tracon Coffee, has been trialing anaerobic fermentation with washing stations in Yirgacheffe since 2015, including at Worka Chelichele.

Farmers selectively handpick ripe cherry & deliver it to the station where it’s tightly packed in GrainPro bags and sealed shut to ferment anaerobically (without oxygen) for 18-24 hours. After fermentation, the cherry is carefully removed & laid to dry in direct sunlight on raised beds. The cherry takes approx. 2-3 weeks to dry & is frequently turned to promote even drying.

Worka Chelichele washing station provides training to help farmers produce better quality coffee, with a focus on harvesting & transporting their cherry. Most farms in Yirgacheffe are also organic-by-default, with farmers typically using very few, if any, fertilisers or pesticides.
