A Washed Pink Bourbon from Linarco Rodriguez at Central de Beneficio estate in Colombia. Florals & stone fruit on the nose, with cranberry, peach tea, brown sugar & lime flavours, and a long clean finish.
The family-owned Central de Beneficio farm has been in the Rodriguez family for over 60 years. Linarco Rodriguez & his 6 siblings are 3rd generation growers, each cultivating coffee in their own area.
The farm produces Caturra, Tabi, Pink Bourbon, Geisha & SL 28 varieties. Their communal wet mill and drying facility allows them to process washed, honey, and natural coffees with extended fermentation.
For this Washed Pink Bourbon, the cherry was meticulous harvested, ensuring only the ripest are selected, then floated to remove any impurities. They were then pulped and left in tanks for 48 hours with open fermentation, at around 15°C. After washing, the coffee was transferred to dryers for 25 days at temperatures between 18-22°C.
