A Natural process Caturra lot from Elkin Guzman at Finca El Mirador that features sweet candy floral notes with a crisp, cleansing aftertaste.
This Caturra lot reflects both Colombia’s coffee heritage and the innovative nature of producer Elkin Guzman. A natural mutation of Bourbon, Caturra has long been a staple in Colombian coffee production. Its smaller size means the cherries mature quicker, producing a higher yield. Caturra is known for producing a sweet, complex, and crisp coffee.
At El Mirador, Elkin applies decades of family experience and over 12 years of processing research to every lot. For this coffee, he chose a Natural process, designed to enhance the inherent sweetness and fruit notes while maintaining clarity and structure. The Natural process at El Mirador starts immediately after harvest. The coffee is sorted by floating the cherries in water to remove any defects, followed by hand sorting to remove dark and overripe fruit.
The cherries are then dried whole over 25–32 days in thin layers and turned regularly to ensure even fermentation and consistent drying. Once dried and milled, the coffee is packed into GrainPro to preserve its vibrant flavour. The result is a clean, expressive natural with bold fruit and balanced sweetness.
This is one of three lots we purchased from Elkin this harvest. We also have a Carbonic Maceration Washed lot & a Strawberry Co-ferment Natural, both roasted for filter.
