This Washed Pink Bourbon from Sebastian Ramirez at El Placer farm also undergoes a 48hr anaerobic fermentation. It’s rich and complex with red grape, tart cherry, lychee and a confectionary sweetness.
The El Placer farm is located in the Buenos Aires de Calarcá village in Quindio: a department known for its great coffee culture. Sebastian Ramirez is a 4th generation coffee grower, taking the reins of the farm from his father six years ago.
Sebastian has dedicated his life to coffee, establishing himself as one of the most famous specialty coffee producers in Colombia. His motivation to consistently produce excellent coffee, continues to elevate the El Placer farm name.
The cherry is handpicked & sorted before undergoing a 48hr anaerobic fermentation at a constant 18°C with CO2 injection, followed by 48hrs immersed in water. The cherries are then pulped & washed. Drying occurs over 2 phases. Firstly, controlled drying under canopies at 40°C and 25% humidity for approx. 20 days. The second is a slow & controlled parabolic drying for 5 days under polyshade.
