Roasted for filter, this is everything we love about washed Ethiopian coffee – delicate, fragrant and super refreshing, with a crisp, tea-like structure and bright acidity that shines.
This Grade 1 washed lot comes from Gedeb in Ethiopia’s Gedeo Zone, just south of Yirgacheffe – a region famous for clean, floral coffees with bright citrus lift. Coffee here is grown by smallholder families on tiny garden plots, where coffee plants often grow alongside other food crops using traditional, mostly organic-by-default practices.
Cherries are delivered to the Chelbesa wet mill, where they’re carefully fermented for 36-72 hours in concrete tanks, then graded and dried on raised African beds for 8-12 days. The coffee is shaded during peak sun and rotated regularly to keep drying slow and even, landing at an optimal moisture content before export.
