This Washed Heirloom lot from Adorsi washing station in Ethiopia, brings jasmine florals, cooked nectarine and sweet red apple flavours with mellow, juicy malic acidity.
This coffee comes from the Adorsi washing station in Tulise village, Yirgacheffe, where around 700 small-holder farmers deliver their cherries.
Though not traceable to a single variety, this lot includes native heirloom varieties common in Ethiopia. Yirgacheffe is rich with biodiversity. The region’s warm tropical climate and balanced wet and dry seasons create lush vegetation, with most coffee grown in shaded, organic environments. Coffee is grown at elevations between 1,900 and 2,200 meters, with the variety of microregions adding depth and complexity to the flavor profile.
At Adorsi, coffee is processed using traditional Ethiopian methods with some modern upgrades, like extended fermentation. First, float tanks are used to ensure only the ripest cherries are kept. The cherries are then depulped the same day and fermented for 72 hours, with the water replaced every 24 hours to maintain cleanliness. After fermentation, the coffee is dried on raised beds for 5–15 days, depending on the weather. This extended process results in an exceptionally clean and vibrant cup profile.
