BREW RATIO – 15:240

we love the clever dripper for it’s ease of use & the fact that it produces the flavour you get with full immersion brewing (like French press) along with the clarity of the drip method – without the downsides of either. it’s a handy device to take away on holidays or when camping too. we always recommend grinding fresh to get the most flavour from the coffee.

this recipe is for 1 cup, feel free to scale up the brew ratio for more cups.

 

YOU’LL NEED:

~ 15g fresh coffee beans

~ clean water

~ clever dripper & filter paper

~ grinder: we used the Timemore C

~ kettle or something to boil your water – ours is the Fellow Stagg EKG electric

~ scales: we used the Acaia Pearl scales – you’ll also need a timer if your scales don’t have one built in

~ spoon for breaking the crust

~ mug or carafe (to decant your brew into)

step one.

GRIND & HEAT WATER

grind 15g of coffee on a med-coarse grind setting (approx. 26 clicks on the Timemore C) & set kettle to 95 degrees. if you don’t have a digital kettle, let water sit for 1 min after boil, prior to your first pour.

step two.

GET YOUR FILTER READY

there’s a bit of a trick to getting the filter ready. first, fold & tuck in the long edge and then the shorter edge. both should be tucked in on the same side. it should then fit snuggly inside the dripper.

step three.

PRE-WET THE FILTER

place the filter inside the dripper and pre-wet with approx. 200 grams of hot water. discard the water into your sink. this helps remove any papery taste and pre-heats your dripper as well.

step four.

POUR YOUR WATER

start your timer and pour 240g of water in one big go. you don’t have to be gentle and you want to do this within 20 seconds. as it’s an immersion, a bloom isn’t necessary.

step five.

BREAK THE CRUST

at the 2 minute mark, gently break the crust forming on the top with a spoon. this ensures that all the grounds are saturated and contributing to the extraction

step six.

DRAW DOWN

at 3 minutes, place your clever dripper on top of your favourite mug or carafe and allow for all the coffee to draw down. this can take up to 1 – 2 minutes.

step seven.

SERVE & ENJOY

place your clever dripper into a separate cup as it’s likely to keep dripping, or pop it straight into the sink. enjoy your fresh brew!

HANDY HINTS:

~ if your draw down is taking too long, try grinding a little coarser.

~ we recommend trimming down your paper filter with scissors if it’s too big for your dripper.
